Although carrots are essentially a cool weather crop, they can usually be grown all year round in the UK. It is thought that the carrot originated from Central Asia and was purple in colour! The orange version we know and love today was brought to the West by The Netherlands, around the 1500s and became popular across Europe by the 1700s. Carrots are one of the veggies that most people like. Carrots can be grated, raw, in salads and coleslaw, sliced and steamed or boiled for 5-8 minutes (depending on thickness) or added to soups and casseroles.

Nutrition:

Carrots are a good source of vitamin C and beta-carotene, both of which are important anti-oxidants. That means they really can help you see in the dark!... The beta-carotene they contain is converted by the liver into Vitamin A, which the retina uses to create rhodopsin, essential for night vision.

Storage:

If the carrots in your veg box are still muddy then this is will help keep them fresh for longer. It is best to store them in a paper bag in a cool dark place (not the fridge though) for a week or more.If however they have already been cleaned up then their shelf life is shorter. In this case we recommend you store them in the fridge and use them up quickly.
