Strawberry is a real challenge and even after forty years, this is still a work in progress. After trying a host of varieties, the dairy now uses Senga Sengana ; known for body and flavour. The big problem is colour. They don't use carrots, elderberries, cochineal or any other colours. The result isn't sunset-red, but the taste is a delight.
This cheese comes in a 1kg bag and is really useful to keep in the freezer for when you need it, you can decant into smaller bags and use as you need.
As local as it gets, home grown in Woolacombe, Borough Farm hens graze free-range, in large paddocks around their houses. The eggs are collected each morning, and all individually checked and graded by hand. The hens, and the field in which they graze, are fully free range, with the hens fed an layer feed to supplement their grazing. The result is a beautiful egg with a large deep yellow yolk. I’m sure if you try them you’ll really taste the difference.

Using the finest milk with a traditional French recipe to create this Crème Fraîche recipe, with origins in Norman times, the Jersey cow is prized for its excellent milk & is used to give this particular Crème Fraîche a clean taste with good body and distinctive colour. It is unusual to find a Double Gloucester that has been produced using traditional methods. A mellow orange cheese, with a smooth texture and buttery notes. It's perfect alongside a light red, like Pinot Noir.

Camembert originated in the 18th century, although it was considerably later before the white mould, penicillium camemberti, was identified and introduced. Early Camemberts would have been mottled with a number of different moulds. Legend has it that the original recipe was taught to Marie Harel by a Catholic priest from the Île de France (home of Brie de Meaux), whom she had taken into hiding.

Although putting a great cheese like Parmigiano Reggiano into a vacuum pack seems a sin, it is by far and away the best method of keeping the cheese fresh for weeks in the fridge. Otherwise it becomes oily and waxy, which makes it difficult to grate. This is exactly how Italians buy it. The key is not to remove the vacuum pack, but to open the nose use/grate what you need and seal with foil.
In England we tend to use Parmigiano Reggiano (Parmesan) for grating over pasta, but a this cheese is wonderful eating in nuggets at the end of the meal with a glass of red!.
