Many people think flat leaf parsley has a stronger flavour than the curly variety, and this opinion is backed by chemical analysis which finds much higher levels of essential oil in the flat-leaved. One of the compounds of the essential oil is apiol. In Central and Eastern Europe and in West Asia, many dishes are served with fresh chopped flat leaf parsley sprinkled on top. The fresh flavor of the flat leaf parsley goes extremely well with potato dishes (french fries, boiled buttered potatoes or mashed potato), with rice dishes (risotto or pilaf), with fish, fried chicken, lamb or goose, steaks, meat or vegetable stews (like Beef Bourguignon, Goulash or Chicken paprikash).

Nutrition:

All parts of the Parsley plant are rich in vitamin A, B and C, iron, calcium, magnesium and other minerals. Build your immune system by eating two tablespoons of chopped fresh parsley each day or take it as a juice mixed with carrot, celery or beetroot juice or as a tea or infusion it is a great tonic for the blood vessels, particularly capillaries. Good to reduce anemia as it has more iron than any other leafy green vegetable.

Storage:

The fresh herb can be kept for a short time in plastic bags in the refrigerator, or for a longer period in the freezer, after being blanched quickly in boiling water.
