Sugar Snap Peas are a summer crop – harvested between the months of June and September in the UK. Whereas mangetout is an immature pea which is eaten in the pod, sugar snap peas are slightly more mature & can be eaten as mangetout - or as peas separately.Dried peas have been found in Ancient Egyptian tombs, though it's believed that the fresh, green varieties weren't cultivated until the 17th Century.

Nutrition:

Sugar Snaps – and peas in general - are a good source of protein. A good portion contains more protein than a whole egg, yet they're much lower in fat.

Storage:

It's important to keep peas refrigerated after picking, or their sugar content turns to starch and they lose their flavour. They will keep in the fridge for 2-3 days. Mange tout freeze well (boil for 1 minute and drain well before freezing).
