Strawberry is a real challenge and even after forty years, this is still a work in progress. After trying a host of varieties, the dairy now uses Senga Sengana ; known for body and flavour. The big problem is colour. They don't use carrots, elderberries, cochineal or any other colours. The result isn't sunset-red, but the taste is a delight.

This authentic West Country Farmhouse Cheddar is made in Dorset, using the traditional method of stacking the curds by hand.
